Leftovers Shepherd’s Pie

For when you're tired of turkey sandwiches

I hope everyone had a very happy Thanksgiving yesterday. As I write this (Wednesday morning), I have pots simmering, pie dough softening, and vegetables begging to be prepped. Some of us might agree that the best thing about Thanksgiving is the leftovers. But beyond a really good turkey sandwich or standing next to the fridge eating cold stuffing, what else is there?

Making turkey soup with the carcass is a must, adding some of the fresh vegetables that you invariably have left over from making stock and everything else that you’ve been cooking (a good way to clean out the vegetable drawer). But here’s another idea for you: Make a leftovers pie. I did this a few years ago and made something totally new for dinner the next night that didn’t seem like leftovers at all!
