Thank you for this. Did you also get to try coconut oil instead of vegan butter? I’m looking forward to making the dough - switch up the “power burritos” that I make to keep in the freezer :)

I missed the Jamie Oliver avocado empanada recipe, so thanks for sharing your improved version. I'm often cooking for vegans and they will LOVE these empanadas. I'm thinking I will pair them with the shaved asparagus salad recipe, and the combination will make for a great vegan dinner party.
