I meant to send this earlier , but this salad is amazing!! Oh my goodness, I have made this at least 3 times. Such a delightful fresh salad anytime but especially in the middle of winter. Thank you for sharing!!

I cook for one and usually can only tolerate a single repeat as leftovers so I’m trying to be better at cutting a recipe in half.

This sounds delicious! I cook for two, and almost always make the full recipe for dinner so we can have the leftovers for lunch. We both work from home so it’s nice having something easy all ready to just heat up.

This is right up our alley minus the mayo for me 😉 Usually cooking for 2 but a leftover meal is just fine. We would always finish the salad in first round.

Yes, the Mayo can easily be left out. You might add a pinch of sugar to round out the flavors.

Thx! -Another terrific meal idea! Ditto, mostly cooking for two-often like to freeze leftover portions when possible (as you’ve suggested in the past)...makes great surprise packages when I visit my daughter in college, or when solo at home!

Also-I purchased the Kyocera mandolin when you recommended it last year-love it!! Also keep it wrapped in a kitchen towel to protect the blade-your smart suggestion as well!Thx!

I live by myself so cook for one. I will often cut a recipe in half so that I can have leftovers. If it is something that will freeze well then I will cook the full recipe and freeze some of the leftovers for the days I am busy.

I typically cook for two but love the idea of leftovers for lunch or dinner the next day. I will sometimes repurpose the leftovers or serve them with an additional side if I want to mix it up! Can’t wait to make this recipe this weekend!
