I meant to send this earlier , but this salad is amazing!! Oh my goodness, I have made this at least 3 times. Such a delightful fresh salad anytime but especially in the middle of winter. Thank you for sharing!!

There are two adults in my home. We love leftovers!

So do we! They never go to waste!

I cook for one and usually can only tolerate a single repeat as leftovers so I’m trying to be better at cutting a recipe in half.

I get it! Thanks for letting me know!

Can you substitute thighs?

Expand full comment

definitely- just check to make sure they're done in the same time

This sounds delicious! I cook for two, and almost always make the full recipe for dinner so we can have the leftovers for lunch. We both work from home so it’s nice having something easy all ready to just heat up.

It's a big time saver

We also are two - and always love leftovers! But sometimes, leftovers are really only enough for one more serving :)

This is right up our alley minus the mayo for me 😉 Usually cooking for 2 but a leftover meal is just fine. We would always finish the salad in first round.

Yes, the Mayo can easily be left out. You might add a pinch of sugar to round out the flavors.

Thx! -Another terrific meal idea! Ditto, mostly cooking for two-often like to freeze leftover portions when possible (as you’ve suggested in the past)...makes great surprise packages when I visit my daughter in college, or when solo at home!

Also-I purchased the Kyocera mandolin when you recommended it last year-love it!! Also keep it wrapped in a kitchen towel to protect the blade-your smart suggestion as well!Thx!

Thanks for the feedback Jill! Glad you've been using my tips!

I live by myself so cook for one. I will often cut a recipe in half so that I can have leftovers. If it is something that will freeze well then I will cook the full recipe and freeze some of the leftovers for the days I am busy.

That makes sense! Thanks for your feedback!

I cook for 4 but that includes a teen boy so really 5 or 6!

I typically cook for two but love the idea of leftovers for lunch or dinner the next day. I will sometimes repurpose the leftovers or serve them with an additional side if I want to mix it up! Can’t wait to make this recipe this weekend!

Leftovers for lunch are the best!

Usually cooking for two, but always happy to have leftovers.

Seems to be the consensus!

Ditto: cooking for 2 and 1 leftover.

Exactly! Cooking for 2, but quality leftovers especially appreciated in our busy lives! Can't wait to make this one. Thank you! Enjoy your journey.....that apartment and location look divine! Traveling vicariously with you!

You can refrigerate two of the coated chicken breasts and cook them fresh for the second meal.

Oooh! Great idea!! Why didn't I think of that?? ;-) Yes!

Two adults and a recipe for four means we can savor a meal twice and enjoy a leisurely day two.

Exactly, but thanks for letting me know!

Cooking for two but also love leftovers!

Could you please remind me of the mandolin that you use? I have a big fancy one from William Sonoma but it’s a lot of bother to use. Thank you!

Agreed! I love the simple Kyocera with adjustable ceramic blad which is about $20 on Amazon!

Thank you!
