Hmm. Shortbread are huge favorites here and your biscotti are always in demand. I’d love cookies that can be formed and frozen before baking so I can have fresh cookies ready to go.

I've got you! I'll be testing and labeling everything that works well GF, and there are a lot! I tested them out on a GF host at a dinner recently, and everyone loved them whether they were GF or not!

I think shortbread is the ultimate cookie. Swirled, striped, checkerboard, marbled with tahini (which BTW are addictive) appeal to my basic instincts. Jan Hagel was/is a family favorite

I'm experimenting with green and blue spirulina.. lovely color combo.

As far as cookies go, I had just ordered another [famous] cookie book and to be honest, I am looking forward to your book more! Would it be right to ask for your version of a Dubai bar cookie? Trendy yes but the ingredients are not. Who if not you?!? Also love use of unexpected spices, glazes, toppings, finishes - like the sumac glaze, buckwheat groats, sour cream ganache etc. I have a pantry full of ingredients inspired by your cookie recipes!

Ooh I love hearing that! And yes, I've been very inspired by ingredients! I briefly thought about Dubai but hmm maybe too trendy? Will give it some more thoughts but I made the decision not to do any bars in this book because there was so much to explore in cookies in just 75 recipes! If this one does well maybe a book on bars to follow up?

Oh I think the trend is not waning - more like ramping up! I've been ordering Charles Chocolates (from SF) Dubai bars (see how they did it from scratch themselves) and it does deserve a well-thought out cookie, Dubai-style! Carpe kataifi!

re cookies: I second the request for cookies that can be frozen (in a roll or drop) to bake later. Also “grown up” cookies that have sophisticated flavors that might not appeal to kids but make a great dessert for dinner with friends.

Like others, I love shortbread, gingerbread and bar cookies but would also like the thin Swedish gingerbread cookie version and those made by Biscoff. Great with coffee and tea! Also, I’ve eaten a thin cookie made with sesame seeds and maybe butter and brown sugar, not sure of the ingredients but they are addictive…if you know what I mean by this vague description, I would love that recipe in your new book!

I love your cookies and a few are on my annual cookie gift giving list. I'd love one with olive oil. I just tried Zezettes for the first time and it's such an interesting cookie it makes me think about the possibilities. And an unusual flavor is always welcome.
