Ok I get they require refrigeration, I get that but, what is at room temperature? Thanks for a great recipe and I will get some pistachios today so I can try it. My lemon tree is just starting to produce so fruit. Thanks xo
I had to be careful about this, because I didn't want to recommend putting these in a tin that would be left out fr several days. When I was testing the recipe, I left one out for a day to see how they held up, and my husband ate it, and of course it was fine. I'm sure they are perfectly fine left out all day, or even overnight, but I don't want to recommend that. Use preserves if you want a longer lasting cookie. Room temperature is exactly that- around 70 degrees fahrenheit.

yes, store them in the fridge, but let them come to room temp for serving. It's just a precaution!
