Hi susan! Not to nit pick, but the greens you are cutting off the beets are on the opposite end from the roots- not above them. i guess its called the stem end?
What a stunningly attractive salad! I think this could convert red beet avoiders to actually consume and enjoy them. Good to know that radicchio has such a long refrigerator lifespan too.

Now, to my question, which you may or may not be able to answer. Do you have a suggested source for the lovely flat bowls that you suggest or do you just snap them up when you come across them? Hi Ros-I do gravitate towards this shape because I'm always collecting props for photography.The thing that makes them great for photography makes them great for real-life use too, namely a large surface area, and limited depth. The black wooden bowl is a prized possession and was given to me by a friend who is a woodworker and also a food stylist.
