Loved this recipe! Bars were delicious. But can I make a plea for weight measures. Graham crackers are unobtainable in New Zealand, so I’m subbing in digestive biscuits. I found it awkward to keep making crumbs until I had 1 1/2 cups. If I could have weighed out the quantity of biscuits, it would have been a bit easier. Cheers from New Zealand, Karen Brown

I’m so sorry! I weighed out the ingredients but forgot to make the change to the recipe! It was 145g, snd about 16-17 biscuits!

Oh, thanks for the prompt reply. This recipe is a keeper, loved the tang from the rind. The weights will shave a smidge off the prep time. I use a nutribullet smoothie blender to purée the lemon, then my food processor to do the rest of the filling mix. I literally made this as soon as it appeared in my email. Cheers, karen
