Zucchini baba ganoush--what a great recipe for the abundance of zucchini that will be coming very soon. We will have had our fill of grilled zucchini and the other zucchini go-to's, so this new recipe will be much welcomed.

Can’t wait to try this recipe. Eggplant is my favorite because of the versatility. I just got a new charcoal grill. Dips are the best to have especially in summer because they are easy to make ahead of time; everyone always wants a snack. Just made a horseradish dip and it’s gone already.

This looks great, Susan, and is a fave way to use up zucchini! FYI, this dish has a name: mutabal kousa, though it sometimes also includes yogurt along with tahini.
